3 c. seeded watermelon, cubed into one-inch pieces
1 c. feta cheese, cut into half-inch pieces
1 c. red onion, thin julienne
1 c. packed arugula
1 c. packed butter lettuce
¼ c. fresh Italian parsley leaves
¼ c. fresh mint leaves
Combine the parsley, mint, butter lettuce, and arugula in a bowl and set aside.
Layer half the greens on a serving platter. Then scatter half the watermelon, onion, and feta cheese on top. Top with the greens, and tuck the remaining watermelon, feta, and red onion into the greens. Serve the Watermelon Vinaigrette on the side or drizzle lightly between the layers.
WATERMELON VINAIGRETTE
1 cup watermelon cubes
1/3 cup Manuka honey
2 T. mint leaves
2 T. Dijon mustard
¼ c. rice vinegar
Juice of 1 lime
1/3 cup extra virgin olive oil
Kosher salt and black pepper to taste
Puree the watermelon in a blender. Add the honey, mint, Dijon, rice vinegar, and lime juice. Slowly add in the olive oil. Season with salt and pepper. Taste and adjust. Drizzle over the salad. Enjoy!
